olive oil

finely chopped onion

can pinto bean
15oz can drained and rinsed

low sodium vegetable stock

cumin

chili powder

butter

ground black pepper

cortija cheese
Instructions
Heat olive oil in pan and add onion
saute until soft and translucent
add vegetable broth and beans bring to a boil while stirring
add cumin, chili pepper, salt and pepper and simmer for 5 minutes
puree in a food processor and blend in butter
Top with crumbled cortija cheese
Notes
If you want to keep this dish vegan you can leave out the butter and cheese and add a little more vegetable broth if the beans are too dry.
