An easy white sauce with a hint of mustard

- 1 shallot peeled and sliced thin
- 2 tbsp butter
- ½ cup white wine sauvignon blanc or pinot grigio
- ½ cup heavy cream
- ⅛ tsp black pepper
- ½ tsp dijon mustard
sautee shallots in butter until translucent
add white wine and reduce by half
slowly whisk in heavy cream to emulsify and thicken
add mustard and pepper
strain through a sieve and set aside
